Farm Betania lies in mountainous landscapes of Palestina, in the southern part of Huila region. DoñaMaria Rodriguez is the heart of this idyllic farm. She inherited this true paradise land from her parents and represent the third-generation of coffee producer here. As a single mother and diligent caretaker of Betania, Maria's story is one of perseverance, love for her land, and a deep connection to her roots.
The coffee plants under her care thrive under a canopy of guamo, cachimbo,
orange trees, and avocados, creating a biodiverse ecosystem that benefits both the coffee and the land. Betania's unique approach to coffee processing is a testament to Maria's innovative spirit. She employs, besides traditional washed method, also honey, natural, and even the intricate anaerobic fermentation process. This diversification not only showcases her commitment to quality but also her willingness to experiment and adapt traditional practices to modern tastes.
One of the farm's notable practices is the specialized drying technique used for the coffee. Utilizing a modified roof (helva) that can be opened or closed, Maria is able to regulate airflow and maintain temperature stability, ensuring that each bean reaches its peak flavor profile. This meticulous attention to detail is what sets Betania's coffee apart. While Betania farm currently does not pursue any certifications, the quality and care invested in the coffee cultivation speak volumes of its dedication to sustainable and responsible farming. The farm is a self-sustained oasis, with its own water source and surrounded by breathtaking natural beauty, further highlighting Maria's commitment to preserving the environment. In addition to coffee, the farm is also home to avocado, orange, plantain, and banana trees, enriching the biodiversity of the area and providing a source of sustenance and income. During the main harvest season, Maria is joined by two to four helpers, ensuring that every bean is picked with care and attention.
Processing
Only ripped cherries are collected; selected by density, and then de-pulped and fermented in the tanks for approximately 30 hours.
After the coffee is washed and dried for 18 to 24 days, depending on the weather conditions. The used water after the processing is collected and cleaned so as not to contaminate the environment.
The coffee is then placed in well-air-conditioned canopy beds and turned several times a day to dry steadily. This careful, controlled process contributes to the coffee's unique flavor profile and high quality.
